hi stefanradu5,
open the GUI, go to Devices, select 3 in 1 sensor (the main one, not the specific for temperature or light), go to device options, add configuration settings, add what you need based on documentation.
Go to advanced, commands, configure node right now. You need to put the device in inclusion mode with the physical button so that it would accept the config change. It might take a couple of trials until it works.

Am I missing something. When I add configuration settings for this device, the value part is greyed out so I can't change a parameter, e.g. 80 to zero to turn off the LED

You have to set the data size to either 1 byte or 2 byte as appropriate for the parameter.  By default it is set to "Monitor only" so that you can view the currently set value.

For parameter 80 use "1 byte dec" and value 0 to turn off the LED.
