When should I start thinking about logging to a USB drive?

I'm currently at about 20 - 25 devices. That probably won't grow beyond 30 in the next year or so. At what point would it be beneficial to use a USB drive for the logs?

BTW these are physical devices I'm talking about here (light switches, outlets, thermostat, etc.) not virtual devices.

You should be ok without using a usb drive. The logging was needed for the power users who had many devices 50+ and also had many plugins. This caused the vera unit to run very low on memory and even caused the device to reboot. If you know how to get ssh access to the unit, you can check to see how much memory vera is running by using the "free" command. If you have no need for verbose logging, this can also be turned off. So in the end, if vera has been running pretty stable at it's current state, you are probably safe to not need to run usb logging.
